Soft Chocolate Chip Cookies

8 tablespoons of salted butter

1/2 cup white sugar

1/4 cup packed light brown sugar

1 teaspoon vanilla

1 egg

1 1/2 cups all purpose flour (6.75 ounces)

1/2 teaspoon baking soda

1/4 teaspoon salt

3/4 cup chocolate chips

Directions:

Preheat the oven to 350°F. Microwave the butter for approximately 40 seconds until it’s nearly melted, but not hot—just soft and mostly liquid.

Using a stand mixer or electric beaters, cream the butter and sugars together until smooth. Add the vanilla and egg, and beat on low speed for about 10-15 seconds, just until combined. (Avoid over-beating the egg, as it can make the cookies too stiff.)

Stir in the flour, baking soda, and salt until the mixture forms crumbles. Use your hands to press the crumbles together into a dough. It should form a single large ball, feeling right between "wet" and "dry" dough. Add the chocolate chips and mix them in using your hands.

Roll the dough into 12 large balls (or 9 for extra-large, amazing cookies) and arrange them on a cookie sheet. Bake for 9-11 minutes, until the cookies appear puffy, dry, and just barely golden. Important note: DO NOT OVERBAKE. While this is common advice in many cookie recipes, it's especially crucial here to keep the cookies soft. Remove them from the oven even if they seem slightly underdone (refer to the picture in the post). They should be pale and puffy.
