Make Sopa with Me!

This is kinda the fast and cheap way of making sopa, my family makes it this way when we don’t really feel like putting a lot of effort into cooking. 🍜

These ingredients we almost always keep stocked in our house, I usually roast a jalapeño with the potatoes but we didn’t have one and I didn’t feel like going to the store lol.

top it with some crema, queso fresco, and chopped cilantro!!

... Read moreOkay, so you loved my fast and cheap sopa recipe, but let's dive even deeper into why this is truly my go-to for those 'no effort' days and how you can make it even quicker and more versatile! Seriously, from pantry to plate, it’s usually under 30 minutes for us, which is a lifesaver. The real secret to a super quick sopa is all about smart ingredient choices and not overthinking it. First off, using La Moderna Stars pasta is key because those little star-shaped noodles cook up so incredibly fast. You don't want to use a larger pasta shape if you're aiming for speed. And don't shy away from canned tomato sauce like Hunts Roasted Garlic Tomato Sauce – it saves a ton of time and adds flavor instantly without needing to chop and sauté fresh tomatoes. My family always has a few cans stocked, alongside those convenient Knorr bouillon cubes (both chicken and tomato chicken flavor are fantastic here!). They’re flavor bombs that dissolve quickly and make your broth taste like it’s been simmering all day. Remember how I said 'measure with your heart' for spices? That's the beauty of this *quick sopa*. You can easily adjust the *chili powder*, *garlic powder*, *onion powder*, *sea salt*, and black pepper to your liking without complicated measurements. If you like a little kick, a pinch more chili powder or even a tiny bit of cayenne can spice things up quickly. If you happen to have a jalapeño on hand, roasting it with the potatoes before adding liquids really deepens the flavor profile without adding much extra time. Want to make this quick sopa even heartier or add some protein? If I have leftover shredded chicken or even some ground beef, I'll toss it in at the end to warm through. Canned black beans or pinto beans, rinsed well, are also super easy to add for extra fiber and protein. For more veggies, frozen corn or peas can go in with the pasta for the last few minutes of cooking. They cook quickly and add a nice pop of color and sweetness. And speaking of serving, those cheesy quesadillas made with flour tortillas and shredded yellow and white cheese for dipping are non-negotiable for us! They're so easy to make while the soup simmers. But if you're looking for other quick sides, a simple avocado salad, a sprinkle of fresh cilantro, or even just some warm tortillas are great too. This recipe is also fantastic for meal prep. I often make a bigger batch and store leftovers in individual containers. It reheats beautifully on the stovetop or in the microwave, making for an even quicker lunch the next day. Hope these extra tips help you make this quick sopa an even more regular and beloved meal in your home!
