What I Ate This Week as a Young Home Owner Pt. 2

This week included quick brunches, comfort dinners, and easy meals that take just a little bit of effort to prepare. My absolute favorite this week has to be the Aldi’s Ready to Bake Stuffed Crust Pepperoni Pizza, and the homemade Beef Roast I made. It was the first recipe I made that I found from this platform and it was amazing!!

Also don’t roast my poop looking hot dogs 😂 I am picky when it comes to toppings and have recently been adding toppings after 20 years so yay me. Also, had to repeat the Spaghetti & Meatballs to save some money from last week’s grocery trip! All food was purchased from Aldi and Ingles

This week, I focused on meals that didn’t require hours in the kitchen but still felt special and homemade. For instance, Aldi’s Ready to Bake Stuffed Crust Pepperoni Pizza was a game changer for those evenings when I wanted something tasty with minimal effort. The convenience of a ready-to-bake item saved me time while still delivering delicious results. I also tried my hand at making a homemade beef roast, inspired by a recipe I discovered on this platform. It was my first attempt and turned out incredibly well, giving me confidence to experiment more in the kitchen. Slow-roasting the beef allowed me to enjoy a comforting dinner without constant attention, leading to tender, flavorful meat perfect to pair with simple sides like rice. Another cost-saving tactic I’ve embraced is repeating meals that work well for leftovers, like spaghetti and meatballs. It’s not only economical but also a proven crowd-pleaser. Shopping primarily at Aldi and Ingles has helped keep grocery expenses low without sacrificing quality. Even small wins like adding toppings to hot dogs after years without have made cooking feel more creative and enjoyable. I found that experimenting with toppings can turn a basic meal into something exciting. Overall, this week’s meals reflect a balance between convenience, budget-awareness, and the joy of homemade food. Whether it’s a quick brunch with french toast and bacon or comfort food like mac and cheese paired with chicken nuggets, these dishes have helped me settle into homeownership with better cooking habits and meal inspiration.
