-Taco Tuesday- Healthy Taco Stuffed Peppers 🫑
🌮🍽️ Yesterday, I whipped up some healthy and delicious taco-stuffed peppers! These were not only super tasty but also incredibly filling. The best part? I had plenty of leftover filling to use for another recipe coming soon. Stay tuned!
Here’s how I made the scrumptious filling:
1. Started by washing three peppers of different colors and cutting them in half, which gave me six halfs. Took out the stems and laid them on top of some tomato sauce in a casserole dish.
2. Started the baking process at 375°F for 15 minutes.
3. Sautéed some onions and used a ground beef and pork mixture because that's what I had on hand, but you could also use ground turkey, which is what I would normally use.
4. Added in a can of corn, a can of washed and drained black beans, taco seasoning, mixed everything together, and added a little bit more tomato sauce.
5. Then, I added in a cup and a half of cooked long grain white rice, but you can also use brown rice.
6. I then carefully removed the peppers out of the oven and stuffed each one, with the filling, covered with foil, and baked for another 30 minutes.
7. When they came out, I topped with some low-fat cheese and popped them back in the oven for another 10 to 15 minutes, until the peppers were as tender as I liked.
8. When you're ready to serve, I serve these with some guacamole or sour cream, top with a little fresh cilantro, and have with a side salad. So easy and delicious!
