These Frankenstein Rice Krispie Treats
👀 Monster Brownie Squares
Ingredients:
Brownie Base
1 box brownie mix (plus eggs, oil, and water it calls for)
OR make homemade brownies if you’re fancy
Crunchy Layer
3 cups Rice Krispies cereal
1 cup peanut butter (creamy)
1 cup corn syrup OR honey
1 cup sugar
Monster “Slime” Topping
1 can vanilla frosting (or 2 cups homemade buttercream)
Green food coloring (gel works best)
Eyes
Candy eyeballs (buy in baking aisle or online)
Optional: white chocolate chips with mini M&M’s as DIY eyes
Instructions:
1. Bake Brownies
Bake your brownie base in a greased 9x13 pan.
Let cool completely. (Or throw it in the freezer for 15 minutes if you’re impatient like me. 😆)
2. Make the Crunchy Layer
In a saucepan, heat sugar + corn syrup until just bubbling.
Remove from heat and stir in peanut butter until smooth.
Add Rice Krispies and stir until coated.
Spread this over the cooled brownies, pressing gently to make an even layer.
3. Monster Slime Topping
Tint your frosting bright green.
Spread thickly and messily on top—the “slime” should look drippy, uneven, and swampy.
4. Add the Eyes 👀
Stick candy eyeballs on while the frosting is still soft.
Make some crooked, some falling off the edge—that’s what gives personality.
5. Chill & Slice
Refrigerate for about 30 minutes so the layers firm up.
Cut into squares, making sure each gets at least 2 eyes.
Tips to make them extra fun:
Add gummy worms poking out of the sides.
Swirl in black or purple gel food coloring streaks in the frosting for a spooky vibe.
Sprinkle with crushed Oreos for “dirt.”
Adding extra fun and texture to your Frankenstein Rice Krispie Treats can make them even more delightful for kids and adults alike. Consider incorporating crushed cookies such as Oreos to give the crunchy layer an earthy, 'dirt-like' appearance, enhancing the monster theme. When preparing the monster slime topping, using gel food coloring is ideal because it creates a bright and vivid green that looks more authentic, but don't be afraid to play with black or purple swirls for an eerie contrast. For those who enjoy experimentation, swapping out the peanut butter for almond or sunflower butter can offer different flavors while keeping the sticky texture necessary for the crunchy layer. If you prefer a natural sweetener, honey is a great alternative to corn syrup and provides a slightly floral note. To elevate the spooky decor, DIY candy eyes can be made by sandwiching mini M&M's onto white chocolate chips, giving your monster treats a custom and quirky look. Gummy worms poking out of the sides add a creepy-crawly effect, perfect for Halloween gatherings. Remember to chill the treats well after assembling so the layers firm up and are easier to cut into clean squares. These Frankenstein treats are a fun and creative dessert that bring a playful spirit to any occasion, especially during the Halloween season. Don't hesitate to adapt the recipe with your favorite flavors or toppings to make it uniquely yours.
