Turkey Bacon Omelette with Avo Toast 🥑
✨ Ingredients:
- 2 large eggs
- 2 slices of turkey bacon
- 70 grams of fresh sourdough bread
- 50 grams of bell pepper, diced
- Salt and pepper, to taste
- 2 ounces of mashed avocado
✨ Instructions:
1. Cook the turkey bacon slices in a non-stick skillet over medium heat until crispy. Set them aside on a paper towel to drain excess grease.
2. In the same skillet, add the diced bell pepper and sauté until slightly softened.
3. While the veggies are cooking, toast the sourdough bread until golden brown.
4. In a separate bowl, whisk the eggs and season with salt and pepper.
5. Pour the whisked eggs into the skillet with the cooked bell pepper.
6. Cook the scrambled eggs over medium heat, stirring occasionally until they reach your desired consistency.
7. Spread the guacamole evenly onto the toasted sourdough bread slices.
8. Divide the scrambled eggs between the two slices, placing them on top of the guacamole. Or you can have them separately like I did this morning!
9. Cut or crumble the turkey bacon slices and arrange them on top of the scrambled eggs. (I put them in my omelette this time!)
10. Season with additional salt and pepper if desired. I added some everything bagel seasoning and red pepper flakes!
