Pumpkin Cinnamon Sugar Donuts
Ingredients:
1 ¾ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
¼ teaspoon ground cloves
½ teaspoon salt
2 large eggs
¾ cup pumpkin puree
½ cup light brown sugar, packed
½ cup milk
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
For the Cinnamon Sugar Coating:
½ cup granulated sugar
1 tablespoon ground cinnamon
4 tablespoons unsalted butter, melted
Directions:
Preheat oven to 350°F (175°C). Lightly grease a donut pan.
In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
In another bowl, beat together eggs, pumpkin puree, brown sugar, milk, melted butter, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.
Spoon the batter into a piping bag or a zip-top bag with the corner cut off and pipe the batter into the prepared donut pan, filling each cavity about two-thirds full.
Bake for 12-15 minutes, or until the donuts are golden and a toothpick inserted into the center comes out clean.
While the donuts are baking, mix together the granulated sugar and ground cinnamon in a small bowl.
When the donuts are done, allow them to cool for a few minutes, then dip each one in melted butter and roll in the cinnamon-sugar mixture until fully coated.
