Turtle Chocolate Pecan Cheesecake

Turtle Chocolate Pecan Cheesecake

Ingredients:

For the crust:

2 cups chocolate cookie crumbs

1/2 cup unsalted butter, melted

2 tbsp granulated sugar

For the filling:

3 packages (8 oz each) cream cheese, softened

1 cup granulated sugar

1/2 cup sour cream

3 large eggs

1 tsp vanilla extract

1/2 cup semi-sweet chocolate, melted and cooled

1/2 cup caramel sauce

1/2 cup chopped pecans

For topping:

1/4 cup caramel sauce

1/4 cup chocolate sauce

1/2 cup toasted pecans

Directions:

Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.

Mix chocolate cookie crumbs, melted butter, and sugar in a bowl. Press firmly into the bottom of the pan to form the crust. Bake for 10 minutes, then set aside.

In a large mixing bowl, beat cream cheese and sugar until smooth. Add sour cream, then mix in eggs one at a time. Stir in vanilla.

Divide batter into two bowls: stir melted chocolate into one and caramel sauce into the other.

Pour half the chocolate batter over the crust, then drizzle with caramel batter. Sprinkle chopped pecans. Repeat with remaining batter to create swirls. Use a knife to gently marble the layers.

Bake for 55–65 minutes, until edges are set but center is slightly wobbly. Let cool in oven with door cracked for 1 hour, then refrigerate at least 4 hours or overnight.

Before serving, drizzle with caramel and chocolate sauces, and top with toasted pecans.

... Read moreIf you're a fan of combining rich, creamy, and nutty flavors in your desserts, this Turtle Chocolate Pecan Cheesecake is bound to be a crowd-pleaser. One of the best parts about this recipe is the beautiful marbling effect in the cheesecake filling, created by alternating the chocolate and caramel batters and gently swirling them together. This not only adds visual appeal but also allows each slice to deliver bursts of both chocolate and caramel flavors, perfectly complemented by crunchy pecans. When preparing the crust, using chocolate cookie crumbs instead of traditional graham crackers intensifies the chocolate flavor and adds a satisfying texture that pairs well with the creamy filling. Make sure to firmly press the crust mixture into the pan to create a sturdy base that will hold the cheesecake as you bake and chill it. For the cream cheese filling, beating the cream cheese and sugar until very smooth is crucial for a silky texture. Adding sour cream helps maintain moisture and provides a slight tanginess that cuts through the sweetness, balancing the richness. Incorporating the eggs one at a time ensures the batter is well-mixed without incorporating too much air, which can cause cracks during baking. Baking at a moderate temperature and allowing the cake to cool slowly with the oven door cracked helps prevent cracks on the surface and yields a creamy center with just the right amount of jiggle. Patience during the chilling stage is key; chilling overnight will set the cheesecake perfectly and deepen the flavors. For an extra touch of indulgence, topping the cheesecake before serving with additional caramel and chocolate sauces along with toasted pecans enhances both the appearance and flavor. Toasting the pecans allows their natural oils and aroma to intensify, adding a delightful crunch that contrasts with the cake’s creamy texture. To customize, you can experiment with different types of nuts like walnuts or add a sprinkle of sea salt on top to heighten the sweet and salty flavor combination. Whether for a holiday treat, birthday, or any special gathering, this Turtle Chocolate Pecan Cheesecake combines the best elements of classic turtle candies into a luxurious dessert experience that your guests will love.
