Hey everyone! I wanted to share one of my absolute favorite weeknight meals thatโs always a huge hit in my household: homemade Fajitas with a side of flavorful Arroz con Vegetales. Seriously, if you're looking for something satisfying, healthy, and surprisingly easy to make, this is it! Iโve refined my recipe over time, and it never disappoints. Itโs perfect for using up whatever veggies you have in the fridge, making it super versatile too. For the Fajitas, I usually go with chicken because it cooks quickly, but thinly sliced beef or even shrimp works wonderfully. You'll need about a pound of protein, sliced into strips. Then, grab some bell peppers โ I love a mix of red, yellow, and green for color and sweetness โ and an onion, all sliced into strips. The magic truly happens with the seasoning! You can buy a store-bought fajita mix, but I prefer to make my own with chili powder, cumin, smoked paprika, garlic powder, onion powder, a pinch of cayenne for heat (optional!), salt, and pepper. Just toss your protein and veggies with a good drizzle of olive oil and a generous amount of this seasoning blend. Now, for the Arroz con Vegetales, or rice with vegetables, itโs all about building layers of flavor. I start with about a cup of long-grain white rice, rinsed until the water runs clear. In a pot, I sautรฉ a little garlic and onion in olive oil until fragrant, then add the rice and toast it for a couple of minutes. This step is key for that perfect texture! Then, I pour in about two cups of chicken or vegetable broth โ broth instead of water adds so much depth. For the veggies, I love adding a mix of frozen peas, diced carrots, and corn towards the end of the cooking process. Sometimes Iโll even stir in a spoonful of tomato paste for a slightly richer color and flavor. Bring it to a boil, then reduce heat to low, cover, and let it simmer for about 15-20 minutes until all the liquid is absorbed and the rice is fluffy. To cook the fajitas, heat a large skillet or cast-iron pan over medium-high heat with a little oil. Once hot, add your seasoned chicken and veggies in a single layer. Don't overcrowd the pan โ cook in batches if necessary โ to ensure they sear instead of steam. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and the vegetables are tender-crisp. You want those beautiful charred edges! Once everything is ready, I like to serve the fajitas and rice family-style. Warm up some tortillas (corn or flour, your choice!) and set out toppings like salsa, guacamole, sour cream, and fresh cilantro. Everyone can build their own plate, which makes dinner fun and interactive. This meal is so incredibly satisfying and comforting, yet feels light and fresh because of all the vibrant vegetables.
