One of my favorite hacks is embracing versatile vegetables. They add so much flavor, fiber, and nutrients without piling on calories. For example, red cabbage has become a staple in my kitchen. It's not just for slaws! I love stir-frying it with some lean protein like chicken or tofu, a splash of soy sauce, and a hint of ginger. It cooks down beautifully and adds a lovely crunch and vibrant color to any dish. It’s one of those surprisingly easy dinner ideas that tastes gourmet but takes minutes. Another go-to for me is sheet pan dinners. Seriously, if you haven't tried them, you're missing out! Just chop up your favorite veggies – think bell peppers, broccoli, zucchini, and yes, even more red cabbage – toss them with a little olive oil, herbs, and spices, and bake them alongside some fish or chicken. Minimal cleanup, maximum flavor, and perfectly portioned for healthy eating. It’s ideal for those busy weeknights when cooking feels like a chore.
