Delicious 🥥Rice & Coconut Fish Stew
Ingredients:
• 1.5 lbs ponpon fish (any fish of your choice)
• oil
• onion
• garlic
• ginger
• Colored Bell pepper
• tomato
• Carrot
• paprika
• curry powder
• salt & pepper
• coconut milk
• water
• lime
• Salt and pepper, to taste
• Fresh cilantro or parsley, for garnish
• Canjun
Instructions:
1. Season the Fish: (with salt, pepper,lime,canjun,garlic &ginger) set it aside for 15min.
Airfry the fish after 15min.
2. Sauté the Aromatics:
Heat oil in a pot over medium heat. Add chopped onions and sauté until translucent. Add garlic and ginger paste and sauté for another minute. Add grated carrots and sauté for 3min till soft
3. Add Vegetables and Spices:
Add tomato. Cook until soft. Stir in paprika, curry powder and Canjun . Cook for 1-2 minutes to let the spices bloom. Add water and bit of lime juice and let it simmer gently
4. Add the Airfryed Fish:
Gently place the fish chunks into the stew and chopped colored bell pepper. Cover and simmer on low for 7-8min or until the fish accumulates all the flavors of spice and seasonings.
5. Add coconut milk
Put the coconut milk and let it simmer another 5-6min. Taste and adjust salt and pepper if needed.
