Blueberry sponge cake is a delightful treat that combines the natural sweetness of fresh blueberries with the light texture of a classic sponge cake. Using yogurt in the batter not only adds moisture but also helps create a tender crumb, making the cake soft and flavorful. When preparing to bake, it’s important to properly coat fresh blueberries with flour before folding them into the batter—this technique prevents them from sinking to the bottom during baking, ensuring an even distribution of fruit throughout the cake. For best results, preheat your oven to 350°F and use a buttered baking pan to avoid sticking. The recipe’s blend of basic pantry staples—such as sugar, eggs, flour, baking soda, oil, and vanilla extract—keeps the preparation straightforward, making it accessible for both beginner and seasoned bakers. The baking time of approximately 50 minutes allows the cake to cook through while maintaining a moist interior. Flipping the cake out of the pan immediately after baking helps retain its shape and texture as it cools. This blueberry sponge cake can be enjoyed on its own or garnished with powdered sugar, whipped cream, or a drizzle of lemon glaze for added flavor. Additionally, it can be a versatile base for incorporating other fruits or nuts. Whether served as an afternoon snack with tea or as a light dessert, this recipe offers a charming way to highlight fresh blueberries in a classic, homemade cake.
