For the dry spices like garlic powder, onion powder, Kinders red jalapeño pepper, Sazon tropical, turmeric, white pepper, and Lawry's seasoning salt, I like to mix them in a small bowl first. This ensures an even blend before I rub them generously all over the chicken, making sure to get into all those nooks and crannies! These dry spices build the base of flavor, giving that deep, savory goodness that makes every bite irresistible. While the dry rub works its wonders, I prepare my fresh aromatics: minced garlic, green bell peppers, red, yellow, and orange sweet bell peppers, green onions, yellow onions, and celery. I usually chop the bell peppers and onions into roughly 1-inch pieces, and the celery a bit smaller. These fresh ingredients aren't just for flavor; they add incredible moisture and a subtle sweetness as the chicken cooks, creating a delicious sauce or pan drippings that elevate the entire dish. Now, for those busy weeknights when time is precious, the Instant Pot is my best friend for these seasoned chicken thighs! After seasoning, I usually sear the chicken thighs in the Instant Pot on 'Sauté' mode for 3-4 minutes per side until they're nicely browned. This browning step is crucial for developing rich flavor and a beautiful texture. Then, I add the fresh veggies around and on top of the chicken, along with about half a cup of chicken broth (or even just water if you're out of broth – the chicken and veggies will create plenty of liquid!). I've found that you can easily adjust the spice level by adding more or less of the Kinders red jalapeño pepper. Sometimes, if I want a slightly sweeter profile, I'll add a touch of brown sugar to the dry rub – it caramelizes beautifully. And don't forget to taste your final dish and adjust salt if needed.
