When cooking for my Grandpa I need to keep it simple.
Here's one of my easy go-to meals when simplicity is needed with the added benefit of easy to reheat leftovers for days that I'm not there.
Ingredients
2-2.5lbs 80/20 ground beef
2 packets of better goods taco seasoning (or whatever seasoning packet you like)
1 can hot Rotel
1 can rosarita refried beans
1 can lime and cilantro Rotel
tortillas of choice
1 bundle of fresh cilantro
✨ Begin by cooking your ground beef on med-high until thoroughly cooked, being sure to drain the majority of the fat
✨ Add 1/2 cup of water and 2 packets of seasoning to the ground beef and mix well. Add 1 can of hot Rotel without the juice. Letter simmer on low.
✨ Heat one can of Rosarita refried beans in a small pot on medium-low, with 1 can of lime and cilantro Rotel, strained. Cook until fully heated.
✨ Fix your tacos however you want to, I personally like to put beans down first, then meat and top it with a few cilantro leaves.
You can switch out hot Rotel with a different heat level. It adds a good flavor either way.
