Ingredients:

• 4 oz softened cream cheese

• ½ cup cottage cheese

• 2 eggs

• 4 tbsp monk fruit sweetener (golden)

• Splash of vanilla extract

Instructions:

1. Preheat oven to 350°F / 175°C.

2. Add cream cheese, cottage cheese, eggs, monk fruit, and vanilla to a blender.

3. Blend until completely smooth.

4. Pour batter into a lined muffin/cupcake pan.

6. Bake for 30 minutes.
