[Ingredients] Your favorite amount
Freshly cooked rice... Any amount you like
Salt: 0.5% of the weight of cooked rice (* see tips)
Oil (tasteless and odorless): 1% of the weight of cooked rice
Nori... Appropriate amount
Approximately 6 (for 2 go of rice)
Rice 2 go (300g) → cooked about 690g
Salt... about 3.5 g
Oil: about 7 g
Seaweed for sushi rolls (all size Itanori): 2 sheets
[How to make]
Place a bowl on a scale, put rice in it, and add salt and oil in proportion.

私が塩おにぎりでいちばん悩むのが「その日によって塩加減がブレる」こと。そこでおすすめなのが、記事内でも紹介している“割合で決める”やり方です。ご飯の量が増えても減っても、毎回同じ味に着地するので失敗しにくいです。 ■2合で作るとおにぎり何個?目安をもう少し具体的に お米2合(生米300g)は、炊き上がりでだいたい650〜700gくらいになります(硬め・やわらかめで前後)。 ・小さめ(90〜100g):約6〜7個 ・標準(110〜120g):約5〜6個 ・大きめ(140〜150g):約4〜5個 小学生の朝ごはんや習い事前の軽食なら100g前後が食べやすく、部活や外遊びの日は120gくらいにすると満足感が出ました。 ■「塩を入れて炊く」?混ぜ込み?どっちがラクでおいしい 時間がある日は、炊き上がりに塩と油を混ぜる方法が、塩味の調整がしやすくておすすめです。一方で「全量おにぎりにする」と決めている日や、朝の時短を優先したい日は、炊飯器に入れて炊くのもアリ。 私の場合は、炊飯器で作るなら“入れすぎ防止”のために、塩は少し控えめ(0.4〜0.5%の範囲)から試して、食べてから次回微調整しています。 ■冷めても美味しいおにぎりにするコツ(塩握りの食感対策) 冷めると固くなる原因は、握りすぎ+水分が抜けることが多いです。 ・あえて握らず、ラップで包んで形を作る(ふんわりが残る) ・温かいうちに混ぜ、手早く包む(湯気が逃げすぎる前に) ・油1%を入れる(口当たりがやわらかく、パサつきにくい) 作ってから時間が経つお弁当用は、この3つだけでもかなり差が出ました。 ■漬物塩おにぎりにするなら(飽きないアレンジ) 塩おにぎりはシンプルだからこそ、漬物との相性が抜群です。刻んだたくあん、しば漬け、野沢菜などを少量混ぜるだけで、塩分が上がりやすいので“塩0.5%はそのまま or 少し減らす”のがおすすめ。食感も増えて、子どもが「具がないのはイヤ」と言う日でも食べてくれました。 ■雑穀米で作るときの体感(雑穀米 効果が気になる人へ) 雑穀米はプチプチ感が出て噛む回数が増えるので、満足感が上がる感じがしました。香ばしさもあるので、塩は同じ割合でもおいしく感じやすいです。押し麦入りでも同様に、冷めたときの食感が好きでした。 最後に、塩おにぎりは「プロが選ぶ」系の味を目指すほど、実は“感覚”より“計量”が近道だと思っています。ここだけ(塩0.5%/油1%)覚えておくと、もうコンビニで買わなくていいかも…と本気で思える便利さでした。
