your new favorite toddler snack!

i made these greek yogurt mini muffins for my son and they were SUCH a hit! with simple ingredients they’re so much better than the little bites you buy at the store!

ingredients:

1 1/2 cups organic all-purpose flour

1/4 tsp salt

1 tsp baking powder

1/2 tsp baking soda

1 cup plain Greek yogurt

1/4 cup avocado or coconut oil

2 eggs

1/2 cup pure maple syrup

1 tsp vanilla extract

Toppings of choice: chocolate chips, sprinkles, fruit, nuts, etc.

directions:

•in a bowl, whisk together flour, salt, baking powder, and baking soda

•in a separate bowl mix together greek yogurt, avocado/coconut oil, eggs, maple syrup, and vanilla extract.

•mix the wet + dry ingredients in one bowl. add toppings of choice into batter or on top of batter once they are in the muffin tin (your choice)

•spray a mini muffin tin with with cooking oil spray (i used coconut oil spray) and divide batter using a tablespoon portion.

•bake @ 350 for 15-18 min!

this makes about 24 mini muffins! they can be stored in an air tight container in the fridge for up to a week (if they even last that long)
