This Week’s Mealprep

Quinoa Veggie Bowl (vegetarian)

1. Cut up 3 sweet potatoes, 1 onion, handful of mushrooms. Mix in a bowl with a can of chickpeas. Add your seasoning of choice. Mine was salt, pepper, minced garlic, Worcestershire sauce, and olive oil.

2. Roast for 30 minutes at 400 degrees

3. While that’s roasting, cook 1 cup of quinoa with 2 cups of vegetable stock. Bring it to a boil and then simmer until quinoa is fluffy.

4. Add feta on top of your veggies for added flavor and protein !

Would pair nice with an added protein like turkey/chicken sausage, or even ground turkey/beef!

Easy Meal Prep
I usually do my meal prep on Sunday. It takes about 1 hour to get everything prepped/cooked and put into containers. I make 5-6 meals for breakfast, lunch, and dinner. Saturday and Sunday I don’t necessarily plan ahead for those days so I eat whatever I am feeling. Meal planning never works for me
