•1 container of “Gordo’s Cheese Dip” (I use the mild)
•Cilanto for garnish
•Tortillas (optional)
STEP 1)
Open your chicken, add to skillet & fry until fully cooked.
STEP 2)
Add your fajita seasoning. You’ll have to follow instructions according to seasoning packet. My packet called for 1/4 cup of water & 1 tablespoon of oil.
STEP 3)
Cook your minute rice in the microwave for 90 seconds.
STEP 4)
Cook your Gordos Cheese dip for 1 min, take out & stir. Put back in microwave for another 60 seconds.
Step 5) Grab your plate, add rice and chicken to your plate, add your cheese dip, top with Cilantro. If you would like to put your ingredients in a tortilla… that is optional as well.
... Read moreHey foodies! So glad you're loving this Pollo Bandido recipe. It's truly one of my favorite quick fixes when I'm craving something hearty and flavorful, just like you'd get at a Mexican restaurant! You know that feeling when you just want delicious food without all the fuss? This is it!
Many of you might be wondering, 'what exactly is Pollo Bandido?' Well, in simple terms, it's a super popular Mexican-American dish, often featuring tender chicken, savory rice, and that irresistible cheesy sauce. While 'bandido' translates to 'bandit' or 'outlaw,' there isn't one definitive story behind the name for this dish. It's more about the delicious combination of flavors that 'steals' your heart! Think of it as a comforting, cheesy chicken and rice bowl, often served with a side of tortillas. It’s definitely a go-to for many, and now you can "Cook with me pollo bandido" right in your own kitchen!
What really makes this dish "JUST LIKE THE RESTAURANT" is that creamy, authentic Mexican-style cheese dip. I swear by Gordo's Cheese Dip (especially the mild one!), but if you can't find it, a good quality white queso or even making your own simple cheese sauce with Monterey Jack and a splash of milk can work wonders. The goal is that smooth, melty goodness! For the chicken, using pre-cooked options like Tyson Grilled & Ready Fajita Chicken Breast Strips is a total game-changer for speed. But hey, if you have extra time, marinating and cooking your own chicken breast or thighs with some fajita seasoning mix (like the Kroger Fajita Seasoning mentioned) will elevate it even further.
Want to make it your own? This recipe is incredibly versatile! Instead of just cilantro, try adding diced avocado, a dollop of sour cream or crema, or even a sprinkle of chopped green onions for extra freshness. For the rice, while a 90 Second Spanish Style Rice pouch is super convenient, feel free to use homemade Spanish rice or even plain white rice if that's what you have. It's all about making it work for *you*.
And for those asking about 'what can I make with this' or 'how many servings,' this recipe is easily doubled or tripled for family meals or meal prep! A single batch typically serves 1-2 hungry people, depending on portion size. If you're watching your intake, remember that calorie counts can vary widely based on brands and exact measurements, especially for the cheese dip. You can lighten it up by using less cheese or a leaner chicken option, but honestly, sometimes you just need to indulge in that cheesy goodness! Enjoy making this easy, delicious meal that brings restaurant flavors right to your table!
We calm this the Stevens where I live. That looks amazing I will definitely have to try it
