Let’s Get Pickled: Red Onions + Green Eggs!

I had a little too much fun in the kitchen today! I pickled red onions and made green eggs — not the Dr. Seuss kind, the kale-brined kind. I added herbs, jalapeños, celery, and a few garlic cloves for extra flavor. I forgot the peppercorns, but hey… we adapt.
