・ 300-350g radish (about 1 / 3-1 / 2)

・ A little sliced pepper (Even hawk's claw is OK)

⭐ ︎ Water 200ml

⭐ ︎ Mentsuyu (3 times concentrated) 80ml

⭐ ︎ sugar table spoon 2 ~ 3

⭐ Vinegar table spoon 2

⭐ ︎ Soy sauce table spoon 1

⭐ ︎ Sesame oil 1 tsp

⭐ ︎ Garlic tube 1-2cm

Read more「無限大根 漬物」って検索している人は、たぶん“簡単なのに味がしっかり染みて、ポリポリ止まらない系”を探してますよね。私もまさにそれで、この無限大根漬けは「切って漬けるだけ」で満足度が高いので、冷蔵庫にあると安心します。 作るときに一番大事だと感じたのは、大根の切り方。厚いと味が入りにくいので、皮をむいたら薄めの半月切りにすると早く仕上がります。300〜350gくらい(1/3〜1/2本目安)で作ると、漬け汁とのバランスも良くて失敗しにくいです。容器に詰めておくと、あとは漬け汁をかけるだけでラク。 あと、味しみの決め手は「漬け汁をレンチンして熱々のうちにかける」こと。鍋いらずで、600Wで2分(500Wなら2分20秒くらい)温めるだけなのに、冷たい漬け汁より断然早く味が入ります。熱い漬け汁をかけたら、ラップやキッチンペーパーで大根が漬け汁に密着するように落とし蓋みたいにすると、上の方が味薄になるのを防げました。 辛いのが好きなら輪切り唐辛子(鷹の爪でもOK)を少し。辛さは後からでも足せるので、最初は控えめにして「お好みで」調整すると食べやすいです。にんにくチューブ(1〜2cm)とごま油(小さじ1)が入ると、ただのさっぱり漬物じゃなくて“やみつき感”が出ます。 食べ頃は冷蔵庫で一晩。私は待てないとき、粗熱が取れた段階で少しだけ味見するんですが、その時点でも十分おいしいです。ただ翌日になると、全体がまとまって本当に「無限」になります。 保存は清潔な容器で冷蔵が基本。作り置きしておくと、白ごはんのお供はもちろん、こってりおかずの箸休めにも便利でした。個人的には、最後に残った漬け汁を捨てずに、きゅうりや人参を追加で漬ける“追い野菜”もおすすめです。手間ゼロで漬物が増えて得した気分になります。
