What dessert do you bring to Christmas dinner?
I’ve been working on perfecting this recipe for the past 2 years and I’m excited to try my new adaptations in a little over a week! This is a mix between several different recipes and it’s still not perfect but…
Ingredients:
🥧Chosen tart crust (I’m still deciding on my favorite one)
🍓For cranberry filling:
2 1/2 Cups Cranberries, 1/4 cup sugar, 1 1/2 cup water, pinch of salt, 3 tsp gelatin powder, 2 tbsp cold water
🍫 For white chocolate ganache:
12 oz white chocolate, 1/2 cup heavy cream, 4 tbsp unsalted butter
🌲Toppings:
Cranberries, sugared cranberries, white chocolate chips, rosemary sprigs
Steps:
1. Prepare the tart crust as directed according to your recipe/package in a tart pan with a removable bottom
2. Place all of the ingredients for the cranberry filling except the gelatin powder and 2 tbsp water in a pot and bring to a boil. Reduce heat and simmer for 15 min. Mash most of the cranberries and remove from heat.
3. Combine the cold water and gelatin and let set for 5 min until it gels up. Whisk it into the cranberry sauce and then let the sauce cool completely (can put it in the fridge)
4. Fill the tart shell about halfway with the cranberry filling. Place in the fridge until the cranberry filling is set (takes a couple hours or can leave overnight.
3. Heat the cream and butter for the ganache in a saucepan till the butter is melted and small bubbles appear around the edge. Pour this over the chocolate in the bowl and whisk till smooth. Spread this over cranberry layer until it reaches the top of the tart shell
4. Allow the chocolate to harden and then garnish as you wish!
Note: you could also make this without the white chocolate as the cranberry filling is also beautiful! (Pic 2)
