The chicken is perfectly seasoned, the rice is simple but so good, and the roasted veggies bring everything together.
I love this recipe because it’s easy to make, filling, and perfect for meal prep or a family dinner. Next time I would probably make extra skewers because they disappeared way too fast 😭

So simple and so good 🤍
If you're looking to elevate this delicious meal, here are some tips I've found helpful based on my own cooking experiences. First, when blending the chicken, adding a touch of yogurt or lemon juice can tenderize the meat even more and add a subtle tang. I also like to marinate the chicken mixture for at least 30 minutes in the fridge before shaping and baking—it really helps the spices penetrate the chicken for deeper flavor. For the rice, cooking basmati rice with a cinnamon stick or a few whole cardamom pods infuses a lovely aroma that complements the curry powder seasoning on the chicken. Drizzling olive oil right after cooking keeps the rice fluffy and adds richness. You might also consider garnishing the rice with fresh chopped cilantro or parsley to add color and freshness. When preparing your vegetables, slicing them evenly ensures they roast uniformly. Since the recipe suggests baking them for 40 minutes, stirring halfway through can help avoid any burning and encourages caramelization that brings out their natural sweetness. If you want an extra layer of flavor, sprinkling a little smoked paprika or chili flakes on the veggies before roasting adds a delicious smoky or spicy kick. Lastly, using wooden or metal skewers both work well, but soaking wooden skewers in water for 30 minutes beforehand prevents burning if you're grilling or broiling instead of baking. This recipe’s balance makes it a versatile choice—you can switch up the veggies seasonings or even incorporate other proteins like lamb or tofu for variety. Overall, these skewers with rice and roasted veggies are a dependable go-to for me when I want a wholesome meal that’s easy to prepare, full of bold flavors, and perfect for leftovers. Enjoy experimenting with this dish and making it your own!
