Roasted baked chicken
Roasted baked chicken with baked beans, creamy chicken rice, sweet corn and crescent rolls
Ingredients you'll need for the chicken:
8-10 drumsticks
canola oil
spray butter
stick butter
McCormick rotisserie chicken seasoning
parsley
garlic powder
salt/pepper
paprika
ranch powder
things needed to prep & cook:
mixing bowl(s) or bag
casserole dish (9×13)
foil
meat thermometer (optional)
Turn oven to 300°
1. clean your chicken and remove any extra skin/fat
2. pat dry even under the skin
3. place in a large enough mixing bowl or bag then add your oil and mix until all coated (use your heart for the amount of oil but start off a little at a time, you can always add more but you can't take it back)
4. mix all your dry seasoning together then add them with your oil coated chicken (once again use your eyes/heart for the amount of seasoning, if you need #s id start off 1/2 tbsp of each with only a 1/2 tsp of salt/pepper, you can always add more after you mix it)
5. be sure to get up under that skin you wanna taste those spices in every bite
6. spray or rub a 9×13 casserole/baking dish with spray butter or just some softened butter or whatever you like.
7. place your chicken in the dish being sure to leave some space between each leg
8. cube up about 4-5 tbsp of butter and place it in some of the empty spots
9. cover with foil
10. bake for 1.5-2 hours covered being sure to turn about half way thru, after the liquid looks to be clear(if using a thermometer it should be around 165°-185°F) place back in the oven uncovered for an additional 15-20 minutes on 400° to give the top a nice crisp(optional of course)
you can always add a splash of water or chicken broth during baking if it starts to look dry.
if you don't have time to slow roast it then you can add some broth to the bottom of the dish before covering to put in the oven, make at 375° for around an hour being sure to turn half away thru & spooning some of liquid off bottom on the chicken so it stays moist. once cooked take off the foil and place back in for an additional 10-15 minutes on 450° to get the crisp skin if preferred
If you're cooking side dishes you can start them during the uncovered portion of baking the chicken.
