Easter cheesecake stuffed carrot bundt cake

Need a unique Easter treat to take to family dinner? This will be a crowd favorite. I made this for our family Easter and everyone loved it!

14 oz can crushed pineapple in natural juice

unsalted butter , for greasing

1 tbsp cocoa powder (unsweetened)

CHEESECAKE STUFFING:

12 oz cream cheese block , softened

1/3 cup sour cream

1/2 cup white sugar

2 tsp lemon zest

1/2 tsp vanilla extract

3 tbsp all-purpose flour

1 large egg , at room temperature

BATTER:

2 cups all-purpose flour

2 tsp baking soda

1/2 tsp salt

2 tsp cinnamon powder

2/3 cup milk ,

1 tsp white vinegar

3 large eggs , at room temperature

1 1/2 cups brown sugar

1/2 cup light olive oil

2 cups shredded carrot ,

THICK CREAM CHEESE GLAZE:

4 oz cream cheese , softened

2 tbsp unsalted butter , softened

1/2 tsp vanilla extract

2 cups powdered sugar , sifted

1 1/2 tbsp milk

1 tbsp lemon juice

DIRECTIONS:

1. Preheat oven to 400, grease 12 cup budnt pan with butter then lightly dust with cocoa powder.

2. Drain pineapple in a colander, pressing out excess juice. Save the juice for later.

3. Cheesecake filling- Beat together the cream cheese, sour cream, sugar, lemon, and vanilla. Add in flour just until mixed. Add egg and mix well. Put in a piping bag and sit in the refrigerator.

4. Batter- whisk together the flour, baking soda, salt, and cinnamon in a large bowl. In a separate bowl mix the milk, vinegar, eggs, brown sugar, olive oil and 1/4 cup of the pineapple juice. Whisk until smooth, then stir in the crushed pineapple, shredded carrot. Pour this over the flour mixture and gently stir until combined.

5. Assembling- pour around 2.5 cups in the pan. Pipe a ring directly onto of the batter, avoiding the edges of the pan. Cover with remaining batter.

6. Bake for 30 minutes. Remove, loosely cover with foil and bake another 30 minutes use a skewer to check that the cake is cooked.

7. Let the cake cool for around 20 minutes and add the glaze.

To make the glaze:

Beat the butter, cream cheese, and vanilla until mixed. Add the powdered sugar in until combined.

adjusting thickness- goal is to spoon it and it thickly go down the sides. Beat in milk and lemon. You can add extra milk if needed.
