Monsta Enchiladas

3lbs Ground beef (each enchilada stuffed with 1/2lb meat)

1lb shredded cheese blend

3 fresh sliced jalapeños

5 sliced sweet peppers

1 bag shredded lettuce

Mama Rose Garlic Habanero pepper sauce

Goya yellow rice

Hot Enchilada sauce

Not for the faint hearted. Each enchilada weighs in at a little over 1/2lb with cheese and sauce. My plate was almost 1 1/2lb lol

Okay, you say 'not for the faint hearted' but I bet my grandma could eat one of those and ask for seconds!
