Merida’s Spell Cake Recipe

Meridas Spell Cake

Prep time: 45 mins

Cook time: 36 mins

Makes: 1 cake

Crust ingredients:

1 1/4 cup flour

2 tbs powdered sugar

1/2 cup butter (cold cubes)

1 egg yolk

2 tbs cold water

Filling ingredients:

1/2 cup butter, room temp.

1/2 cup powdered sugar

3 eggs, room temp.

2 tbs almond extract

1 cup almond meal

3 tbs flour

Garnish:

Blueberries (optional)

Raspberry Jam

Directions:

In a food processor, combine all of the crust ingredients. Form the dough into a disc shape

Wrap in plastic wrap and chill in fridge for 30 mins.

In a separate bowl combine all of the filling ingredients

Set aside

Roll out the dough and use spring form pans as a guide to cut the crust top and bottom

Place the dough in pan and freeze for about 10 mins

Use the remaining dough to make 2 braids

Add the filling into your crust

Place the dough top on top and use water to secure together

Add braids to crust and use water to secure

Cut a cross in the top and brush with egg wash

Bake at 350 degrees for 31 mins

Cover with foil and bake an additional 5 mins

Let it cool and remove from pan

Cut a hole in the top

Sprinkle with powdered sugar and fill hole with raspberry jam

Garnish with blueberries and any other herb you like
