Tiana’s Gumbo

Ingredients:

1/4 cup vegetable oil

2 tbs vegetable oil

1/4 cup flour

12oz mild andouille sausage, sliced

1 lg chopped onion

1 lg chopped green bell pepper

2 stalks chopped celery

2 minced garlic cloves

1 1/2 tsp salt

1/2 tsp pepper

3/4 tsp dried thyme

2 small bay leaves

6 cups chicken stock

1/2 lb diced chicken breast

Cooked white rice for serving

Directions:

In a large heavy skillet, warm 1/4 cup oil over medium heat. Add the flour and cook, stirring occasionally until the mixture is a deep chocolate color (about 15 mins). Transfer to a heat proof bowl

In a large pot, heat 1 tbs oil. Add the sausage and cook until well browned (about 6 mins). Transfer to a plate. Add the remaining oil, onion, bell pepper, and celery and cook all for about 5 mins. Add the garlic and cook 1 min more. Stir in the salt, pepper, thyme, and bay leaves.

Add the chicken stock and bring to a simmer. Add in the flour mixture and whisk until smooth. Add the chicken and cook, stirring occasionally (about 20 mins)

Scoop onto your rice and serve.

Seriously, don't skip this step or rush it! When the recipe says 'deep chocolate color,' they mean it. I remember my first time, I was so scared of burning it, but trust me, low and slow is the way to go. Keep stirring! That beautiful, nutty aroma means you're almost there. It’s the foundation of all that incredible flavor. This step really makes or breaks your gumbo, giving it that authentic depth that Tiana herself would approve of.
