Tiana’s Gumbo
Ingredients:
1/4 cup vegetable oil
2 tbs vegetable oil
1/4 cup flour
12oz mild andouille sausage, sliced
1 lg chopped onion
1 lg chopped green bell pepper
2 stalks chopped celery
2 minced garlic cloves
1 1/2 tsp salt
1/2 tsp pepper
3/4 tsp dried thyme
2 small bay leaves
6 cups chicken stock
1/2 lb diced chicken breast
Cooked white rice for serving
Directions:
In a large heavy skillet, warm 1/4 cup oil over medium heat. Add the flour and cook, stirring occasionally until the mixture is a deep chocolate color (about 15 mins). Transfer to a heat proof bowl
In a large pot, heat 1 tbs oil. Add the sausage and cook until well browned (about 6 mins). Transfer to a plate. Add the remaining oil, onion, bell pepper, and celery and cook all for about 5 mins. Add the garlic and cook 1 min more. Stir in the salt, pepper, thyme, and bay leaves.
Add the chicken stock and bring to a simmer. Add in the flour mixture and whisk until smooth. Add the chicken and cook, stirring occasionally (about 20 mins)
Scoop onto your rice and serve.
