Made thumbprint cookies for the first time
This is my first time making thumbprint cookies. The dough came out great but I’m worried that I ganache came out a bit runny. I’m gonna put it in the freezer or the fridge to solidify them. I’m making them for a work meeting.
Recipe:
COOKIE DOUGH
1 cup unsalted butter
3/4 cup granulated sugar
1 tablespoon of brown sugar
1 large egg
2 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp salt
2 1/4 cups all purpose flour
FOR THE GANACHE FILLING
8 ounces chocolate chips/melts
1 cup heavy whipping cream
1 pinch salt
1/2 tsp vanilla extract
Preheat oven to 375°F bake for 8 to 10 minutes
Cream the butter with the sugars
Preferably, add each of the remaining ingredients for the cookie dough, one at a time. (the cookie dough should be firm enough to roll in your palms with little to no sticking, if it sticks, add a tablespoon of flour at a time, until it no longer sticks.
Scoop about a tablespoon or 1 ounce of dough. Roll into balls and then use your thumb or fingers to make a dent in the center. (I like to make it more dipped with a metal 1 tablespoon scoop in the middle of baking.)
Instructions for ganache:
Note: this recipe will give you plenty of extra ganache so if you don’t want a whole ton extra, I’d recommend cutting the ganache recipe in half.
Heat up your heavy whipping cream to where it’s hot, but not boiling. add your choice of chocolate chips/melts (I use dark chocolate melts)
Then add your vanilla extract or imitation vanilla extract, either one is good. (I used imitation) and then the salt. Stir until well combined and let it sit. Somewhere cool or cold.
When cookies are cool down, pour a quarter teaspoon into each cookie and chill in the fridge or freezer.
