it’s soup season! meaning I’m stocking up on warm foods so I went ahead and made caldo de pollo (first time making it) with beans and rice and imma tell you how to make it for you and friends or family! a bonus when watching anime or christmas movies, super warm and cozy during winter months

PSA : If there’s more than two servings, double up the ingredients

Caldo de Pollo

Ingredients ⏬

▢ 8 cups water

▢ 8 chicken thighs or drumsticks

▢ 1 tablespoon salt

▢ ¼ teaspoon black pepper

▢ 4 garlic cloves chopped (i used garlic powder)

▢ 1 tablespoon olive oil

▢ ¼ cup white long grain rice (or leftover rice!)

▢ ½ cup chopped onion

▢ 2 tomatoes chopped Roma tomatoes (optional)

▢ 2 carrots sliced

▢ 3 potatoes quartered

▢ 1 green celery chopped

▢ 2 chayote squashes

▢ ⅓ cup tomato sauce

▢ 1 tablespoon chopped cilantro

▢ 1 Lime sliced wedges for serving

▢ Corn tortillas for serving

▢ optional 1 avocado sliced

Beans + Rice

Pretty straight forward, get a small pot and start sautéing onions, garlic, and some peppers in a pot with olive oil. Afterwards, stir in your spices like cumin, goya adobo, paprika, and garlic powder. Then incorporate your drained beans (goya beans or any brand) along with your tomato sauce. Bring to a boil then reduce heat and simmer until you think all the flavors had been absorbed.
