4 ingredient no bake sugar cookie bites 🎅🏼🧸🎁❤️💫

• 1 pack of sugar cookies (10 in total)

• 8oz of cream cheese, slightly softened

• 12oz bag of white chocolate chips

• Christmas sprinkles of choice

1) In a large bowl combine your cookies and cream cheese. Start by adding in all 10 cookies, use your hands to break them up first and then add in the cream cheese and mix until you have a dough consistency and everything is well incorporated.

2) Line a baking sheet with parchment paper. Grab a handful of the cookie mixture and roll to form cake pop sized balls. Place on the baking sheet. This recipe should make 12.

3) Once all 12 are formed, place baking sheet in freezer for 30 mins to allow hardening. It’ll make the next step a lot easier.

4) After 30 minutes, remove from freezer and dip into your melted white chocolate. (To melt the chocolate, dump the entire bag of chocolate chips into a bowl, I also added a tbsp of coconut oil and microwave for 1:30)

5) After dipping all of the balls, place the baking sheet into the refrigerator for about 5 minutes. The chocolate will harden quickly. Use the remaining chocolate to drizzle on top of the balls and then add on your sprinkles while the drizzled chocolate is still warm (it’ll dry fast so add the sprinkles right away).

6) Refrigerate for another 5 minutes and enjoy!

7) Store any extra in an airtight container in the fridge for up to a week 😊 @Aldi

... Read moreMy friends, if you're anything like me, sometimes you just crave those delicious sugar cookie flavors without all the fuss of baking. That's exactly why these no-bake sugar cookie bites are my absolute go-to, especially during busy seasons! The original recipe is fantastic for making festive "4 ingredient sugar cookie christmas bites," but I've picked up a few extra tips and tricks that make them even more foolproof and fun to customize. First off, let's talk about the 'no-bake' magic. It means no preheating ovens, no waiting for dough to chill for hours, and no worrying about burning your cookies. This recipe truly is a lifesaver when you need a quick dessert or a last-minute gift. I love that I can whip up a batch of these no-bake sugar cookies even when my oven is full, or I simply don't want to heat up the kitchen. While the recipe specifies sugar cookies, don't be afraid to experiment! I've had great success with different types of plain cookies. For instance, sometimes I'll use shortbread cookies for a richer, buttery flavor, or even vanilla wafers if I want a slightly different texture. Just make sure the cookies you choose can be easily crushed and combined with the cream cheese. Speaking of cream cheese, it's the secret binder that brings everything together and adds a lovely tang. Make sure it's softened, as the recipe suggests – it makes mixing so much easier. I've even heard of people using mascarpone for an extra decadent touch, though I haven't tried that myself yet! Now, for the coating: white chocolate is classic, but feel free to get creative. Dark chocolate or milk chocolate chips would also work beautifully, offering a completely different flavor profile. When melting your chocolate, remember the tip about adding a touch of coconut oil – it really helps create a smooth, dippable consistency. My personal trick is to melt it in short bursts in the microwave, stirring well each time, to prevent it from seizing. And if you're "using ingredients from Illa ALDI" like I often do, their chocolate chips are usually a great, affordable option! For toppings beyond just Christmas sprinkles, the sky's the limit! Think finely chopped nuts (pecans or walnuts are delicious), crushed peppermint candies for an extra festive kick, or even a dusting of cocoa powder for a more sophisticated look. You can also drizzle with a contrasting chocolate color after the first layer has set. A common question I get is about consistency. If your mixture feels too sticky to roll, try chilling it in the fridge for another 10-15 minutes before forming your balls. If it's too crumbly, you might need a tiny bit more softened cream cheese, or even just a teaspoon of milk to help bind it. Keeping your hands slightly cool when rolling also helps prevent the mixture from sticking. These no-bake sugar cookie bites aren't just for Christmas! Change up your sprinkle colors, and you've got treats for birthdays, Halloween (orange and black!), or even Valentine's Day (pinks and reds). They store wonderfully in an airtight container in the fridge for up to a week, making them perfect for meal prepping desserts or gifting to friends and neighbors. Trust me, these simple yet impressive treats will become a regular in your rotation!
