Ingredients:

• 1 can chickpeas

• 1 can coconut milk

• 1 cup diced tomatoes

• 1 carrot, sliced

• 1 onion, diced

• 3 garlic cloves, 1-inch ginger

• 1 cup spinach

• 1 tbsp curry powder, 1 tsp turmeric

• 2 plantains, coconut oil

• 1 cup brown rice

Steps:

1. Sauté onion, garlic, and ginger with spices.

2. Add chickpeas, coconut milk, tomatoes, carrot, and simmer 15 mins. Stir in spinach.

3. Fry plantains in coconut oil until golden.

4. Serve curry over brown rice with plantains.
