2 lb boneless chuck roast, trimmed

¾ tsp salt

½ tsp pepper

2 Tbsp olive oil

2 (14.5-oz) cans less sodium beef broth

4 cloves garlic, crushed

2 chipotle peppers in adobo sauce, chopped

1 red onion, cut into wedges

1 bay leaf

Instructions

Season beef with salt and pepper. Cook beef in hot oil in a large skillet over medium-high heat 5 minutes or until browned on all sides; transfer roast to a 5- to 7-quart slow cooker coated with cooking spray.

Add broth, garlic, chipotle peppers, onion, and bay leaf.

Cover and cook on LOW 8 hours or until roast is very tender. Discard bay leaf; serve sauce over beef.

2 lb sweet potatoes, peeled and coarsely chopped

¼ cup milk

2 Tbsp butter, melted

½ tsp salt

½ tsp pepper

1 Tbsp fresh lime juice

2 Tbsp chopped fresh parsley

2 (8-oz) pkg thin green beans

Side Dish Instructions

Bring potatoes and salted water to cover to a boil in a Dutch oven. Reduce heat, and simmer 15 minutes or until potatoes are tender. Drain.

Add milk, butter, salt, pepper, lime juice, and parsley. Mash with a potato masher to desired consistency.

Steam green beans according to package directions. Season with salt and pepper, if desired.
