Healthy Cucumber Snack

Everyone has seen the “sometimes you need to eat a whole cucumber” guy on TikTok- so I thought I’d give it my own spin!

START BY: slicing your rinsed cucumbers. I used the mini kind, but you can also use the normal size. I find the thinner the sliced, the better they absorb the sauces!

IN A CONTAINER: add the cucumbers, and all other seasonings and sauces. Feel free to sub out or alter measurements below.

SHAKE SHAKE SHAKE: I like the container method so you can simply shake all your ingredients together.

ENJOY: you can eat right after, or let it sit and soak for a tasty snack later on.

INGREDIENTS:

- Sliced cucumbers (I used 3 mini cucumbers)

- Sprinkle of basil (I happened to find fresh basil for a good price)

- 1 Tbsp of mayo (I subbed for avocado oil mayo as a slightly healthier alternative)

-Seasonings: measured with my heart on all of them

-Sauce: I mixed two of my favorite BBQs and subbed out ranch dressing, for the seasoning (less runny mixture than dressing)

My basic recipe is a great starting point, but I've experimented with so many variations to keep things interesting. For instance, sometimes I go for a Mediterranean twist – instead of BBQ sauce, I'll add a squeeze of fresh lemon juice, a sprinkle of dried oregano, and some fresh dill (which I often pick up from places like Sprout House, as I've seen in my own fridge!). It pairs wonderfully with the crispness of the cucumbers. Another favorite is a Spicy Asian Fusion. I'll swap the mayo for a drizzle of sesame oil, a splash of rice vinegar, and a pinch of chili flakes. It gives the "Sunset Mini Cucumbers" such a vibrant kick! honestly cucumber salad tastes so refreshing and yummy when it’s just cucumber, salt, and lemon juice(or lime) just freshly squeezed out of your palm. it’s just so refreshing and yk you’re eating healthy and it tastes yummy too. if you’re not a fan of lemon/lime juice vinegar and oil also works super well. the recipe is just sour but that’s how i love it since i grew up eating lemons as a snack(im also persian so all our fruit candies were either super sour or super sweet, i preferred the sour ones)
