Chicken Salad
Ingredients:
* 2-3 lbs chicken thighs
* Garlic powder
* Onion powder
* Creole seasoning
* Garlic & herb seasoning
* Smoked paprika
* 5 boiled eggs
* Celery, diced
* Onion, diced
* Sweet salad cubes (sweet pickles)
* Duke’s mayonnaise
* Yellow mustard
* Salt & pepper to taste
* Pinch of sugar
Directions:
Season chicken thighs with garlic powder, onion powder, Creole seasoning, garlic & herb seasoning and smoked paprika. Boil until cooked through and tender. Let cool, then shred the chicken.
Boil 5 eggs, peel and chop.
In a large bowl, combine shredded chicken, chopped eggs, diced celery, diced onion and sweet salad cubes. Add Duke’s mayo and a little mustard until you reach your desired consistency. Season with salt, pepper and a pinch of sugar to taste. Mix well and chill before serving.
Enjoy alone, with crackers or you can make a sandwich!
