Mini pumpkin cheesecakes

Ingredients:

1 cup graham cracker crumbs

2 tbsp sugar

4 tbsp melted butter

8 oz cream cheese, softened

1 cup pumpkin puree

1/2 cup sugar

1 tsp vanilla extract

1 tsp pumpkin pie spice

2 eggs

Directions:

Preheat your oven to 350°F (175°C).

Mix graham cracker crumbs, 2 tbsp sugar, and melted butter. Press into the bottom of a muffin tin.

In a bowl, beat cream cheese until smooth. Add pumpkin puree, 1/2 cup sugar, vanilla, and pumpkin pie spice. Mix well.

Add eggs one at a time, beating after each addition.

Pour the mixture over the crusts in the muffin tin.

Bake for 20-25 minutes or until set. Let cool before serving.
