Preserved lemons 🍋
Ingredients
12 Organic Myer lemon's
3 Tablespoons sea salt
If desired: add one bay leaf, a pinch of red pepper flakes and half tablespoon of multicolored peppercorns.
Directions
1. Cut lemons into quarters, Don't cut all the way through. Leave around half an inch at the bottom and try to keep lemon pieces together.
2. Use one tablespoon of salt into a cut lemon, use a clean large jar. Remove the rinds off of two lemons and add them to the jar.
3. Once your jar is filled with the lemons, juice additional lemons and place the juice in the jar covering all lemons.
4. Fermentation will begin, burp/open The jar every day for the first couple of days to release any gas from the jar. Set the jar aside in a cool place for a month and up to 6 months.
5. The lemons are ready to use when the skins have softened. This recipe can also be used with limes.
