shout out to my girlies who can cook.. because i'm not so good at it🙈

not only do i have a terrible habit of messing recipes up or just not having energy to cook, it takes so much more time! i would much rather heat up some mac n cheese, or ramen, or pasta!🤤

there are a few things that i do "cook" that are actually good for me though! my favorite is this pasta called "penne alla vodka".. best thing in the WORLD and super fast and easy to make! another thing i like to make are B.E.L.T's (like BLT'S, but with egg!! so tasty, 10/10 recommend) and bento boxes (i did actually make the ones i showed lol), but besides that my go-to's are quick, easy and, well.. unhealthy.🤧

i will admit, although me and cooking do not get along, i have been trying to make newer foods recently! i'm starting very small obviously, but i made shrimp for the first time the other night and felt like a freaking CHAMP💃

it is super interesting to see all of the different #whatieatinaday posts, because everyone's is so different and unique! some people like to cook, some don't, some are in the middle, and that's okay!🤗

So, let me dive a bit deeper into how I make these choices work for my busy office schedule, and why it's totally okay to embrace the convenience! First up, mornings. Getting out the door for work is already a marathon, so breakfast has to be super simple. Sometimes, I'm lucky enough that someone brings in sweets for breakfast at the office – a true lifesaver! Think muffins, pastries, or even some leftover cake. On other days, it's a quick yogurt or a granola bar I can grab and eat at my desk. The goal? Fuel up without adding stress to my commute. Lunch is where my beloved bento boxes truly shine. I mentioned I love to snack, and these are perfect for a quick and easy office lunch. I prep them the night before with a mix of crackers, cheese, fruit, and maybe some pre-cooked chicken or hard-boiled eggs. It’s like a grown-up Lunchable, and it keeps me from hitting the expensive takeout options every single day. Plus, it’s a great way to use up bits and bobs from the fridge! If I don't have a bento box ready, I might grab a quick sandwich or, yes, sometimes those delicious instant ramen noodles. No shame in that game when deadlines are looming! Snacks are crucial for keeping energy levels up during the workday. For me, it's often something simple like fruit, nuts, or a small bag of chips. But let's be honest, sometimes a sweet treat is just what you need! I'm a huge fan of ice cream, even if I'm lactose intolerant – a small scoop is pure joy. And while bringing an entire charcuterie board to the office might be a bit much (though a girl can dream!), having a mini version with some cheese and crackers is a fantastic pick-me-up. It's about finding those little moments of indulgence that make the day a bit brighter. And then there's dinner after a full day at the office. This is usually when my desire to cook plummets. My go-to's like mac n cheese or a hearty bowl of ramen noodles are often on the menu. They’re quick, comforting, and require minimal effort. I'm also a sucker for good takeout, and potstickers are a definite favorite. While eating out can get expensive, sometimes the convenience and deliciousness are worth it after a particularly draining day. I've been trying to incorporate a few more 'homemade' options, like my easy penne alla vodka or a BELT sandwich, but honestly, the quick and easy meals are my bread and butter most nights. The biggest takeaway for me is embracing what works for your life. Not everyone is a chef, and that's perfectly fine!
