Postpartum/ Gestational Diabetes Recipe

This low glycemic, high protein meal is great for gestational diabetes, postpartum & weight loss. I was diagnosed with GD due to my fasting glucose and was eventually prescribed a small dose of insulin before bed. It was extremely upsetting, but with meals like this and a helpful husband I was able to keep my pregnancy weight gain minimal, and actually lose body fat, until breastfeeding. I lost all but 9 lbs when I came home from the hospital and I have gained 7 lbs of that back.
