Sourdough Sandwich Bread✨🍞
ingredients:
236g warm water
21g honey
9g active dry yeast
4tbs softened butter
560g all purpose flour
8g salt
285g sourdough discard
stand mixer recommended

1. whisk together warm water, honey, yeast. Let sit room temp 5 min.
2. in a stand mixer bowl w/ dough hook attachment, add water yeast mix, butter, flour, salt, & sourdough discard.
3. knead on low speed for 8-10 min until dough is formed and smooth. knead by hand for 10+ minutes until dough can withstand the windowpane test. this will mean your gluten has developed enough.
4. place dough in a greased bowl and cover with lid, plastic wrap or damp towel.
5. Let dough rise for 1-2 hours or until it doubles in size. mine took an hour and 30 min. Place in warm dry area.
6. grease bread pan and add parchment paper (cut to fit).
7. On a lightly floured surface, roll dough flat into a rectangle shape. roll it up and fold ends underneath loaf as shown in video.
8. add shaped bread to pan and let rise for 30-40 minutes. cover with towel.
9. Whisk one egg and brush the top of dough.
10. Bake loaf at 375° for 45 minutes until golden brown and internal temp is 195-210°. Cool down before slicing & enjoy
