BBQ PULL CHICKEN

When I hear "Kingsford pulled chicken," I immediately think of that classic, smoky, sweet, and tangy profile that's just irresistible. It's a flavor that takes you straight to summer cookouts, even on a chilly Tuesday evening. Achieving that Kingsford-esque BBQ taste in an Instant Pot is totally doable. It all starts with the right foundation. For my chicken, I usually grab a bag of chicken breasts or thighs – whichever is on sale and looks good! Before it even touches the Instant Pot, I love to give it a generous rub. You can make your own simple rub with staples like garlic powder, onion powder, paprika, a touch of brown sugar, and a pinch of cayenne for a little kick. This really helps build depth of flavor that a sauce alone can't achieve. Now, for the BBQ sauce itself. While you can certainly use Kingsford's own BBQ sauce, you can also achieve a similar profile by choosing a sauce that’s rich, slightly sweet, and has a good tang. Some people even like to add a tiny splash of liquid smoke directly to the Instant Pot to really boost that outdoor grill flavor. After the cooking cycle, I carefully release the pressure, and then, using a couple of tongs or forks, I shred the cooked and shredded BBQ chicken right in the pot, letting it soak up all that delicious, rich sauce. This step is crucial for flavor saturation! Serving shredded BBQ chicken is where the fun really begins! My absolute favorite way is piled high on toasted brioche buns with a generous scoop of creamy coleslaw and a few tangy pickles. But don't stop there!
