Chia pudding is a fantastic dessert choice not only because it’s delicious but also for its nutritional benefits. Chia seeds are packed with fiber, omega-3 fatty acids, and protein, making this pudding a balanced treat. Combining the chia seeds with creamy coconut milk and Greek yogurt adds healthy fats and probiotics that support digestion. What I love most about this Mango Coconut Chia Pudding is how versatile and easy it is. You can prepare it in just five minutes and let it chill in the fridge while you go about your day. The overnight chilling helps the chia seeds absorb the liquid fully, creating a pudding with the perfect spoonable texture. Using fresh ripe mango purée and topping with slices gives it a tropical sweetness and vibrant color that makes it attractive and inviting. I often make a rose shape with the mango slices for a beautiful presentation, especially if serving guests. This recipe is naturally sweetened with honey, but you can adjust the sweetness to your taste or substitute with maple syrup or agave nectar to keep it vegan-friendly. For added crunch, some toasted coconut flakes sprinkled on top work wonderfully. Whether you’re looking for a light and healthy dessert or a refreshing breakfast idea, this mango coconut chia pudding hits all the right notes—simple, nutritious, and delicious. It’s one of my favorite go-to recipes during hot summer days when you want something cool yet satisfying.
