... Read moreUsing sourdough starter discard in baking is a great way to reduce waste while adding unique flavors and textures to your treats. This easy sourdough cookie recipe combines traditional cookie ingredients like butter, sugar, and eggs with sourdough discard, lending a subtle tanginess that complements the sweetness of the chocolate and peanut butter chips. When preparing the dough, creaming the butter with both white and brown sugar helps create a moist and tender cookie. Incorporating the sourdough along with eggs and vanilla extract balances moisture and flavor well. Separately mixing the dry ingredients—including all-purpose flour, baking soda, baking powder, and salt—ensures even distribution and proper rising during baking. Chilling the dough is an important step to enhance flavor development and improve cookie texture. While the recipe recommends an overnight chill, even an hour can help prevent excessive spreading during baking. Baking at 350°F (175°C) for 8-9 minutes produces cookies with a soft center and slightly crisp edges. Customizing chip choices is a fun way to make this recipe unique; you can swap the chocolate and peanut butter chips for any combination you enjoy, such as white chocolate, butterscotch, or even nuts. These cookies pair wonderfully with a glass of milk or a cup of coffee. For best results, measure flour carefully and avoid overmixing once dry ingredients are added. This prevents tough cookies and ensures a light, chewy texture. Using fresh baking soda and powder is essential for proper rise. Incorporating sourdough discard into recipes like this is a fantastic strategy for home bakers looking to experiment with flavors and minimize kitchen waste. Plus, it’s an approachable way to introduce sourdough into sweet baked goods without the complexity of traditional sourdough bread baking.
