Valentine's Day Dessert Ideas🩷❤️
Servings: 4 big popsicles:
Ingredients:
- 1 cup diced strawberries (240 ml / 180g)
- 1/2 cup (lactose-free) full-fat Greek yogurt (120 ml /
125g)
- 1 teaspoon vanilla extract
Toppings:
- 150 g / 5 oz. dark chocolate, melted (70-80% dark chocolate)
- 1 teaspoon coconut oil
- optional: freeze-dried strawberries.
Methods:
1. Mix the strawberries, yogurt and vanilla extract together
2. Spoon dollops onto a plate lined with parchment paper.
Push popsicle sticks into the dollops
3. Freeze for about 2 hours
4. Melt the chocolate in the microwave with the coconut oil in 30 second intervals, mixing in between. I recommend using dark chocolate, because milk and white chocolate are thicker when melted, so dipping the popsicles would be more difficult.
Tips for dipping the popsicles:
1. Make sure that the popsicles are fully frozen before dipping.
2. Let the chocolate cool down for a few minutes before dipping.
3. Dip the popsicles quickly because the chocolate sets very fast. Melt the chocolate again if it starts to set in the bowl
5. Store in the freezer. Let defrost for about 15-20 minutes before serving.
They turned out so good.

2. Healthier Raspberry Brownies✨
Servings: for 8
Ingredients:
- 2 bananas
- 2 tablespoons maple syrup
- 1 egg
- 1/4 cup unsweetened peanut butter or any other nut butter or tahini, I used a pb that is 100% made of peanuts (60 ml)
- 1/4 cup unsweetened cacao powder (60 ml)
- 1/2 cup almond flour (120 ml)
- 1 teaspoon baking powder
- 1 cup raspberries, chopped (240 ml / 130 g)
Toppings:
2 pieces of 80% dark chocolate, chopped
Methods:
1. Mash the bananas
2. Add all the ingredients for the batter into a bowl and stir
3. Fold in the chopped raspberries (you can save some for topping if you like
4. Pour the batter into a baking dish lined with parchment paper. Top with the rest of the raspberries and dark chocolate chunks
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 25 - 30 minutes
6. Let cool down and cut into pieces
7 Store in an air-tiaht container in the fridge
These brownies are pudgy, moist and yummy. The raspberries and chocolate combo is just perfect.
3. Raspberry Yogurt Bark✨
Servings: for 2 - 3
Ingredients:
- 3/4 cup / 3.5 oz. raspberries (180 ml / 100 g)
- 1 cup (lactose-free) full fat Greek yogurt (240 ml / 250 g)
- 1/2 - 1 tablespoon maple syrup or honey
Toppings:
- 2 pieces of 80% dark chocolate, melted Strawberries
Banana
- 2 tablespoons chopped nuts
Methods:
1. Mash the raspberries. Add the yogurt and sweetener and stir
2. Spread the mixture onto a cutting board / plate lined with parchment paper
3. Add the toppings
4. Let set in the freezer for about 2 hours
5. Cut into pieces
6. Store in an air-tight container in the freezer
7. Let it sit in room temperature for 15-20 minutes before serving to let it defrost a bit!
4. Healthier Raspberry Chocolate Truffles✨
Servings: 8 big truffles
Ingredients:
- 1/2 cup unsweetened cacao powder (120 ml)
- 1/2 cup almond flour (120 ml)
- 3 - 4 tablespoons maple syrup
- 1 - 3 tablespoons milk of choice
- 1 teaspoon vanilla extract
Toppings:
-3.5 oz. / 100 g 80% dark chocolate freeze dried raspberries, crushed.
Methods:
1. Mix all the ingredients together. Add less milk first and then add more if needed
2. Roll into balls. Place on a plate lined with parchment paper
3. Let set in the freezer for 1 hour
4. Dip in melted dark chocolate and top with freeze dried raspberries
5. Store in the fridge or freezer in an air-tight container
These are rich and pudgy. The combination of raspberries and chocolate is so delicious.
