Iced Lemon Loaf Recipe🍋🍞

BAKE TIME

45-55 minutes ⏰

INGREDIENTS

Cake loaf:

1 cup sugar

zest of one lemon

1/2 cup oil

2 eggs

juice of one lemon

1 1/2 cups flour

2 tsp bp

1/4 cup milk

1/3 cup yogurt

Icing:

1 cup powdered sugar

2 tbsp lemon juice (or milk)

**INSTRUCTIONS**

1. Begin by preheating your oven to 350°F (175°C).

2. In a spacious mixing bowl, combine one cup of granulated sugar with the zest of one lemon. Using your fingertips, gently rub them together to release the aromatic oils from the zest, enhancing the flavor!

3. Incorporate the eggs into the lemon-sugar mixture and whisk until the mixture becomes light and fluffy, approximately 2-3 minutes.

4. Next, add the oil, lemon juice, milk, and yogurt to the egg mixture. Whisk thoroughly until everything is well blended. While whole milk and whole milk Greek yogurt yield the best results, feel free to use any dairy or non-dairy alternatives you prefer.

5. Finally, fold in the flour and baking powder gently, mixing just until no large flour clumps remain.

6. Transfer the batter into a greased and lined loaf pan and bake for 45-55 minutes. The loaf is done when a toothpick inserted into the center comes out clean. Allow it to cool completely in the pan.

7. For the icing, mix one tablespoon of lemon juice (or milk) with one cup of powdered sugar. Gradually add small amounts of lemon juice, mixing until you achieve your desired icing consistency. It’s best to prepare the icing just before serving to prevent it from drying out.

8. Once the loaf has cooled completely, drizzle with icing and enjoy your delightful creation!✨✨
