300g butter plus extra for greasing

50g cocoa powder (I used Ghardelli’s Dutch process cocoa)

150ml coffee stout

170g dark chocolate chips (I used Guittard’s 60%)

250g cake flour

1 tsp baking soda

1tsp baking powder

180g caster sugar

3 large free eggs

8oz mascarpone

1 tbsp vanilla bean paste or vanilla extract

3/4 cup milk and heavy cream to thin the batter

Bonne Maman redcurrant jam (topping)

Bake at 350f for about 45-40min, checking middle occasionally with a skewer. If it comes out clean, you’re all done!
