It’s fall yall
Healthy comfort food is all the rave with fall rolling in 🍁🍂 Grab your pot and let’s warm up with a nice bowl of chicken noodle soup!
1 rotisserie chicken
1/2 an onion
4 big carrots
4 stalks of celery
1/2 a clove of garlic
1 box of noodles any shape
2 cartons of broth (I like to mix a chicken and a bone broth)
Start but cutting and sautéing your veggies in the pot you plan on making ur soup in. (This will help with flavor when we add the broth) when they are just about halfway cooked remove them and add your chicken to the pot. This is where you’ll a little olive oil and the seasoning
of your liking :) after the chicken is warmed add back in your veggies give it a stir.
Add your broths and 1 cup of pasta water from your pasta that you cooked separately. Bring that to a boil and then let simmer together on low for about 30 minutes. I personally like to leave the pasta on the side and add it to my bowl bc pasta is greedy and will soak up all your broth even after cooked! Add it all to your bowl and enjoy!

As the crisp air of fall settles in, there's no better time to enjoy comforting meals that nourish both body and soul. Chicken noodle soup stands out as a timeless favorite, particularly during the cooler months. The blend of fresh vegetables, tender chicken, and hearty noodles creates a dish that not only delights the taste buds but also serves as a warm hug on a chilly day. Using a rotisserie chicken can save you time without compromising flavor, making this recipe both efficient and delicious. Incorporating seasonal ingredients like fresh carrots, celery, and onions not only adds essential flavors but also enhances nutritional value, making your meal healthier. To elevate this classic dish, consider adding herbs such as thyme or dill which can enhance the aromatic profile of your soup. Experimenting with different shapes of noodles can also add a fun twist to your preparation. Remember, cooking the noodles separately is key to preventing them from soaking up too much broth, ensuring a perfect balance of flavors in every bowl.
