Grilled Chicken Bowl with Sweet Potato Fries & Creamy Sauce 🍗🍟

Ingredients:

For the Chicken:

2 boneless, skinless chicken breasts, cut into 1-inch cubes

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

For the Sweet Potato Fries:

2 large sweet potatoes, peeled and cut into thick wedges

1 tablespoon olive oil

1/2 teaspoon paprika

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

For the Slaw:

1/2 head of red cabbage, shredded

1/4 cup shredded carrots

1/4 cup chopped green onions

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/4 teaspoon salt

1/4 teaspoon black pepper

For the Creamy Sauce:

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon chopped parsley

1 tablespoon lemon juice

1 clove garlic, minced

1/4 teaspoon salt

1/4 teaspoon black pepper

Instructions:

Prep the Chicken: In a bowl, combine chicken cubes, olive oil, paprika, garlic powder, salt, pepper, and cayenne pepper (if using). Toss to coat.

Prep the Sweet Potato Fries: Toss sweet potato wedges with olive oil, paprika, garlic powder, salt, and pepper.

Grill the Chicken & Fries: Grill the chicken and sweet potato fries over medium heat for 2-3 minutes per side, or until cooked through and the fries are golden brown and crispy.

Make the Slaw: In a bowl, combine red cabbage, carrots, green onions, rice vinegar, sesame oil, salt, and pepper. Toss to combine.

Make the Creamy Sauce: In a small bowl, whisk together mayonnaise, sour cream, parsley, lemon juice, garlic, salt, and pepper.

Assemble the Bowls: Divide sweet potato fries and slaw between bowls. Top with grilled chicken and drizzle with Creamy Sauce.
