This soup will have you on a chokehold 🍅
I’ve been meaning to post this recipe, and I also still forgot to take a picture of the end result 🤦🏼♀️
However, it’s worth it to give it a go!
These are very rough estimates on how much you need of each ingredient, I am no expert 😂
4 vine tomatoes
1 package of cherry tomatoes
2 heads of garlic
1 large white onion
1 red pepper
Basil
Balsamic
Fresh thyme, oregano, and rosemary
Olive oil
Vegetable stock
Heavy cream
-Preheat your oven at 350
-Largely chop the vine tomatoes, onion, and red pepper
-Slice the heads of garlic off
-Throw everything together in a baking dish and add the basil, rosemary, oregano and thyme.
-Cover all the veggies with olive oil and sprinkle some salt and pepper
-baking time can be anywhere from 30 min to 45min, best to keep and eye on it!
-Throw all everything into a blender, and add some extra basil and a splash of cream plus some vegetable stock.
