Today I took a trip to Trader Joe’s, grabbed a couple of my favorite things number one being in the cornmeal pizza crust love this with their pizza cheese blend or their marinated mozzarella balls.
Tonight I decided to get creative with zucchini, tomato and fresh garlic. I brushed the cornmeal crust down with the olive oil from the marinated mozzarella put the veggies down gave it a coat and then slice the mozzarella balls in half and place it on top. This is one of my go to meals when I don’t know what to eat.
The cornmeal crust are really versatile because I also use this for breakfast. Mix any variety of vegetables or me if you choose I like to add an egg on the top during the last 7 to 10 minutes of baking.
